I made Bistek Tagalog today! My mom would be so proud. I tenderized the beef for three hours, marinated it overnight, then let it simmer in the pan for half an hour. It took me 16 hours to do the entire thing, but it was worth it — the meat came out amazingly flavorful and tender. My mom would make this for us but I never really appreciated until now how much labor this could take.
